  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 6 tablespoons unsalted butter (plus additional for greasing)
  • 1 cup granulated sugar
  • 1 large egg
  • ½ cup buttermilk
  • 2 teaspoons pure vanilla extract
  • 1 tablespoon sparkling sugar (for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and butter a 9" deep-dish pie plate.
  2. Peel and slice peaches into wedges; set aside on paper towels to drain excess moisture.
  3. In a bowl, whisk together flour, baking powder, and salt.
  4. In another bowl, cream the butter and sugar until light and fluffy. Add the egg, buttermilk, and vanilla; mix until combined.
  5. Gradually blend in dry ingredients until just combined.
  6. Pour batter into the prepared pie plate; arrange peach slices on top and sprinkle with sparkling sugar.
  7. Bake for 10 minutes at 350°F, then reduce temperature to 325°F (165°C) and bake for an additional 50–60 minutes or until done.
