  • 6 tablespoons cornstarch
  • 50 ml vegetable oil
  • 1 onion
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 6 tablespoons ketchup
  • 2 tablespoons cider vinegar
  • 6 tablespoons demerara sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon fresh ginger
  • 2 cloves garlic
  • 432 g tin pineapple pieces

Instructions

  1. Season diced chicken with salt and pepper; coat with cornstarch.
  2. Heat oil in a wok over medium-high heat; fry chicken until golden brown.
  3. Stir-fry onion, red bell pepper, and yellow bell pepper for 3–4 minutes.
  4. In a bowl, mix ketchup, vinegar, sugar, soy sauce, ginger, garlic, and reserved pineapple juice; pour into the skillet.
  5. Return chicken to the skillet; add drained pineapple pieces and simmer for about 5 minutes.
