  • 2 large sweet potatoes (approximately 1.5 lbs), peeled and thinly sliced
  • 4 cups kale, stems removed and chopped
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 cup Gruyère cheese, grated
  • 1/4 teaspoon ground nutmeg
  • Salt and black pepper to taste
  • 1 tablespoon olive oil (for greasing)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and slice sweet potatoes thinly; set aside.
  3. In a skillet, sauté chopped kale with a splash of water or olive oil over medium heat for about 5–7 minutes until wilted.
  4. Grease a baking dish with olive oil.
  5. Layer sweet potato slices at the bottom, followed by sautéed kale, a drizzle of cream, and cheese. Repeat layers until all ingredients are used, finishing with cheese on top.
  6. Cover with foil and bake for 30 minutes; then remove foil and bake an additional 20–25 minutes until golden brown.
  7. Let cool for about 10 minutes before serving.
