  • 6 tablespoons granulated sugar
  • 4 tablespoons melted unsalted butter
  • 1/4 cup milk (non-dairy if desired)
  • 2 large eggs (or flaxseed meal mixed with water for vegan)
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 3 cups mini vegan marshmallows

Instructions

  1. Preheat the oven to 400°F (200°C). Prick sweet potatoes with a fork and bake them on a foil-lined sheet pan for 40-50 minutes until soft. Remove and let cool.
  2. Lower the oven temperature to 350°F (175°C). In a mixing bowl, whisk together sugar, melted butter, milk, vanilla extract, and salt.
  3. Peel cooled sweet potatoes and mash them into the mixture until smooth. Stir in eggs until well combined.
  4. Transfer the mixture to a baking dish and bake for 20 minutes.
  5. Scatter mini vegan marshmallows on top and return to the oven for an additional 5-10 minutes until golden brown.
