  • 1/2 cup unsalted butter (room temperature)
  • 1 1/2 cups confectioners' sugar
  • 2 Tbsp lemon zest
  • 2 large eggs
  • 1 1/4 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup whole milk
  • 2 Tbsp lemon juice
  • 2 Tbsp sweet tea lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with liners.
  2. In a mixing bowl, cream the butter, confectioners' sugar, and lemon zest until fluffy (about 3–4 minutes).
  3. Add eggs one at a time, mixing well after each addition.
  4. In another bowl, combine flour, baking powder, and salt.
  5. Gradually mix in half the dry ingredients into the butter mixture, followed by the milk and lemon juice. Finally, add remaining dry ingredients until just combined.
  6. Fill each cupcake liner about three-quarters full with batter.
  7. Bake for 16–20 minutes until golden and set.
  8. Cool on a wire rack before brushing lightly with sweet tea lemon juice and frosting.
