  • 2 tablespoons flour
  • 1 large onion
  • 4 to 5 carrots
  • 3 cups golden potatoes
  • 1 teaspoon fresh rosemary
  • 2 teaspoons sea salt
  • 1 teaspoon black pepper
  • 4 cloves garlic
  • 2 teaspoons tomato paste
  • 2 quarts beef stock
  • 2 sprigs fresh thyme
  • 1 cup flour (for dumplings)
  • 2 teaspoons baking powder
  • 1/2 teaspoon sea salt (for dumplings)
  • 1 tablespoon butter (room temperature)
  • 1/3 to 1/2 cup milk
  • Fresh herbs (parsley and chives, optional)

Instructions

  1. Prepare by chopping onion, carrots, and potatoes into bite-sized pieces. Mince garlic.
  2. In a large pot, heat oil and brown the seasoned stew meat for about 5–7 minutes.
  3. Add chopped vegetables, garlic, tomato paste, beef stock, and herbs. Stir well.
  4. Bring to a boil then reduce heat; cover and simmer for about 120 minutes until beef is tender.
  5. While simmering, mix dumpling ingredients in a bowl until a soft dough forms.
  6. Drop spoonfuls of dumpling batter over the stew; cover and cook for another 15–20 minutes until fluffy.
  7. Garnish with fresh herbs if desired and serve hot.
