  • 1/2 cup dry apple vinegar
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth or stock
  • 2 cups half-and-half, warmed
  • 12 teaspoons fresh thyme leaves, chopped
  • 1/2 teaspoon dried italian herb blend
  • 1 pound gnocchi
  • 1/2 to 3/4 cup shredded parmigiano reggiano
  • 2 cups cooked rotisserie chicken breast, shredded or cubed
  • 2 cups fresh spinach, roughly chopped
  • 1/8 teaspoon freshly grated nutmeg (optional)
  • Salt and freshly ground black pepper to taste

Instructions

  1. In a large pot over medium heat, melt the unsalted butter with extra virgin olive oil. Sauté diced yellow onion, grated carrots, and celery until soft, about 5 minutes. Add minced garlic and cook for an additional minute until fragrant.
  2. Add dry apple vinegar to deglaze the pot, scraping up any brown bits from the bottom. Sprinkle in all-purpose flour while stirring constantly for about 2 minutes until combined.
  3. Slowly pour in chicken broth while stirring continuously to avoid lumps. Bring the mixture to a gentle simmer before adding warmed half-and-half.
  4. Stir in fresh thyme leaves and dried Italian herb blend. Allow it to simmer gently for about 10 minutes so flavors meld together nicely.
  5. Add gnocchi into the pot along with shredded rotisserie chicken. Cook according to package instructions until gnocchi floats to the top.
  6. Fold in roughly chopped spinach just before serving. Let it wilt slightly before seasoning with freshly grated nutmeg (if using), salt, and black pepper to taste.
