  • 2 tbsp teriyaki sauce (store-bought or homemade)
  • 1 cup cooked jasmine rice
  • Avocado, sliced
  • 1 small cucumber, thinly sliced
  • 1 tsp rice vinegar or lemon juice
  • 1 tsp sesame oil (optional)
  • Salt & pepper to taste
  • Lemon or orange wedge

Instructions

  1. Cook the salmon by pan-searing or baking at 400°F (200°C) for 10-12 minutes. Brush with teriyaki sauce during the last 2 minutes.
  2. In a mixing bowl, toss sliced cucumber with rice vinegar (or lemon juice), salt, pepper, and sesame oil if desired. Chill while salmon cooks.
