  • 1 onion, chopped
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes with green chilies
  • 1 ½ cups cornmeal
  • 1 ½ cups water
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 cup shredded cheddar cheese
  • 2 cups shredded lettuce (for garnish)
  • 1 cup sour cream (for garnish)
  • Salsa (for serving)
  • Jalapeños, sliced (optional topping)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, brown the ground beef or turkey over medium heat; drain excess fat.
  3. Sauté chopped onion until softened; stir in black beans and diced tomatoes. Season with chili powder, cumin, garlic powder, and salt; simmer for 5 minutes.
  4. In a saucepan, combine cornmeal and water; cook over medium heat until thickened (about 5-7 minutes).
  5. Spread half of the cornmeal mixture in a greased 9×13-inch baking dish. Layer meat mixture on top and cover with remaining cornmeal mix.
  6. Bake for 25-30 minutes until golden brown; add shredded cheese during the last 5 minutes of baking.
