  • 1 cup bread crumbs
  • 1 onion, chopped
  • 2 pounds lean ground beef
  • ½ cup milk
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon soy sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon tomato paste
  • 2 teaspoons minced garlic
  • 1 teaspoon garlic powder
  • ½ cup ketchup
  • 2 tablespoons brown sugar

Instructions

  1. Preheat your oven to 400°F (200°C) and spray a large loaf pan with nonstick spray.
  2. In a large mixing bowl, combine all meatloaf ingredients: eggs, bread crumbs, chopped onion, ground beef, milk, salt, pepper, soy sauce, Dijon mustard, tomato paste, minced garlic, and garlic powder. Mix until just combined.
  3. Shape the mixture into a loaf and place it in the greased loaf pan.
  4. In a saucepan over medium heat, mix ketchup, brown sugar, and soy sauce until thickened. Pour half over the meatloaf.
  5. Bake for 30 minutes. Afterward, pour remaining sauce on top and bake for an additional 45 minutes or until internal temperature reaches 160°F (70°C).
  6. Let rest for 10 minutes before slicing.
