  • 6 potatoes (cubed)
  • 24 oz mushrooms (sliced)
  • 1 carrot (grated)
  • 1 onion (diced)
  • 8 oz cream cheese
  • 1/4 cup sour cream
  • 1 tbsp chicken bouillon powder
  • 1 mushroom bouillon cube
  • 1 cup heavy cream
  • Fresh dill for garnish

Instructions

  1. In a large pot, boil 12 cups of water and add cubed potatoes and bouillons. Simmer until the potatoes are tender, about 25 minutes. Halfway through cooking, season with salt and pepper.
  2. In a separate pan, heat oil over medium heat and sauté sliced mushrooms, diced onions, and grated carrots until mushrooms reduce in size (about 10 minutes). Stir in cream cheese and sour cream until melted.
  3. Once potatoes are tender, combine the sautéed mixture with the pot of simmering potatoes. Bring everything back to a simmer.
  4. Stir in heavy cream until well combined. Turn off heat and garnish with fresh dill or parsley before serving.
