  • 1/3 cup apricot preserves
  • 1/4 cup granulated sugar
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 1 pineapple (chopped)
  • 2 cups purple grapes (halved)
  • 2 cups green grapes (halved)
  • 1 pound strawberries (hulled and quartered)
  • 5 kiwis (peeled and quartered)
  • 2 large mangos (chopped)
  • 10 ounces blueberries
  • 6 ounces raspberries (optional)
  • 2 cans mandarin oranges (drained)

Instructions

  1. In a large bowl, combine apricot preserves, sugar, lemon zest, and lemon juice; mix well.
  2. Add chopped pineapple to the glaze.
  3. Halve purple and green grapes; add them to the bowl.
  4. Quarter hulled strawberries and add them.
  5. Peel kiwis, slice into quarters, and add.
  6. Chop mangos and add to the mixture.
  7. Gently stir in blueberries and optional raspberries.
  8. Fold in drained mandarin oranges carefully.
  9. Serve immediately with fresh mint garnish if desired.
