  • 20 oz refrigerated cheese tortellini
  • 1 pint cherry tomatoes, halved
  • 1 cucumber, peeled and chopped
  • 1/2 red onion, thinly sliced
  • 1 cup pitted kalamata olives, chopped
  • 1 cup fresh mozzarella balls
  • 1/2 cup chopped salami or pepperoni
  • 1/2 cup grated Parmesan cheese
  • 2 cups baby spinach or arugula
  • Fresh basil for garnish
  • 1/2 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp honey
  • 1 clove garlic, minced
  • 1/2 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the tortellini in salted water until al dente; drain and rinse under cold water.
  2. Prepare the dressing by shaking olive oil, red wine vinegar, Dijon mustard, honey, garlic, oregano, salt, and pepper in a jar.
  3. Combine the warm tortellini with half of the dressing; let cool for 10 minutes.
  4. Add vegetables, cheeses, and remaining dressing to the tortellini; toss gently.
  5. Cover and refrigerate for at least 2 hours before serving.
