  • 2 lbs ground lean turkey
  • 2 cups diced apples
  • 2 cups sliced sweet potatoes
  • 2 cups sliced carrots
  • 3 cups crushed tomatoes
  • 3 Tbs tomato paste
  • 1 Tbs olive oil
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 tsp salt (divided)
  • 1/2 tsp pepper
  • 1 1/2 tsp rubbed sage (divided)
  • 1/2 tsp cinnamon
  • a sprinkle nutmeg
  • 12 cans kidney beans

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté diced apples, sweet potatoes, and carrots with onion powder, garlic powder, salt, pepper, sage, cinnamon, and nutmeg for about 5 minutes.
  3. Add ground turkey and cook until no longer pink (5–7 minutes).
  4. Stir in tomato paste and spices until well combined.
  5. Add crushed tomatoes and let simmer on low-medium heat for 20–30 minutes.
  6. If using kidney beans, add them just before serving.
