  • 4 large russet potatoes
  • 1 tablespoon olive oil
  • 1/2 cup sour cream
  • 1/4 cup milk or heavy cream
  • 4 tablespoons unsalted butter
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup chopped green onions or chives
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C). Scrub potatoes and prick with a fork; rub with olive oil and sprinkle with salt. Bake on a baking sheet for 50–60 minutes until tender.
  2. Let cool slightly, then cut in half lengthwise and scoop out insides into a mixing bowl, leaving shells intact.
  3. Mash scooped potato flesh with sour cream, butter, milk (or cream), cheddar cheese, chives, seasoning until smooth.
  4. Spoon filling back into potato skins and top with extra cheese if desired.
  5. Bake stuffed potatoes for an additional 15–20 minutes until golden brown.
