  • 2 lbs beef chuck roast
  • 8 oz wide egg noodles
  • 4 cups low-sodium beef broth
  • 2 large carrots, sliced thick
  • 1 yellow onion, sliced
  • 2 tsp garlic powder
  • 2 tbsp Worcestershire sauce
  • Salt and pepper to taste

Instructions

  1. Trim excess fat from the beef chuck roast and cut into large chunks.
  2. In a bowl, mix garlic powder, Worcestershire sauce, salt, and pepper. Rub this mixture onto the beef pieces.
  3. Place seasoned beef at the bottom of the slow cooker. Add onion and carrots on top.
  4. Pour in enough beef broth to cover all ingredients.
  5. Cover and cook on low for 8 hours until beef is fork-tender.
  6. Stir in egg noodles about 30 minutes before serving; cook until soft but not mushy.
  7. Serve warm, drizzling extra broth over each portion.
