  • 8 boneless, skinless chicken breasts
  • 1/2 cup extra virgin olive oil
  • 1/3 cup fresh-squeezed lemon juice
  • 1 tsp fresh lemon zest
  • 1 tsp Greek seasoning
  • 1 tsp poultry seasoning
  • 1 tsp dried oregano
  • Black pepper to taste

Instructions

  1. Preheat your grill to medium-high heat.
  2. Trim visible fat from chicken breasts and make small crosswise slits on each breast.
  3. In a bowl, whisk together olive oil, lemon juice, lemon zest, Greek seasoning, poultry seasoning, oregano, and black pepper.
  4. Place chicken in a Ziploc bag and pour the marinade over it. Seal and refrigerate for 6-8 hours.
  5. Drain chicken and allow it to come to room temperature before grilling.
  6. Grill chicken for about 4 minutes per side until cooked through (165°F internal temperature).
  7. Let rest for a few minutes before serving.
