  • 2 cups mini salted pretzels
  • 6 tablespoons salted butter, melted
  • 1 tablespoon brown sugar
  • 6 ounces semi-sweet or dark chocolate, chopped
  • 2 teaspoons coconut oil
  • 4 ounces cream cheese, at room temperature
  • 3/41 1/4 cups powdered sugar
  • 2 cups, plus 1 tablespoon heavy cream
  • 1 1/2 cups creamy peanut butter
  • 1 tablespoon, plus 1 teaspoon vanilla extract
  • Cocoa powder for dusting (optional)

Instructions

  1. Preheat your oven to 350°F and grease an 8 or 9-inch tart pan.
  2. In a food processor, pulse the pretzels with melted butter and brown sugar until fine crumbs form. Press firmly into the bottom of the prepared pan and bake for about 8 minutes until golden brown.
  3. While the crust is cooling, melt chocolate with coconut oil in a microwave-safe bowl at medium power until smooth. Spread this over the cooled crust and chill.
  4. In a mixing bowl, beat cream cheese and powdered sugar until smooth. Add peanut butter and mix well.
  5. Gradually add heavy cream while mixing until fluffy. Spoon into the chilled crust.
  6. Whip remaining heavy cream with powdered sugar until soft peaks form, then dollop generously on top before serving.
