  • 2 ½ pounds stew meat
  • ½ teaspoon black pepper
  • ½ teaspoon garlic salt
  • ½ teaspoon celery salt
  • ¼ cup flour
  • 36 tablespoons olive oil
  • 3 tablespoons chilled butter (split)
  • 2 cups chopped yellow onions
  • 4 minced garlic cloves
  • 1 cup apple vinegar
  • 4 cups beef stock
  • 2 beef bouillon cubes
  • 2 tablespoons Worcestershire sauce
  • 3 tablespoons tomato concentrate
  • 5 medium carrots, chopped into 1-inch pieces
  • 1 pound baby yukon gold potatoes, halved or quartered
  • 2 bay leaves
  • 1 rosemary sprig
  • 1 cup frozen peas

Instructions

  1. In a mixing bowl, combine flour with black pepper, garlic salt, and celery salt. Dredge stew meat in the seasoned flour.
  2. In a skillet over medium-high heat, add olive oil. Once hot, add the coated meat in batches until browned on all sides. Remove from heat.
  3. Layer onions and garlic at the bottom of your slow cooker. Add seared meat on top of the onions.
  4. Pour in apple vinegar followed by beef stock and add bouillon cubes.
  5. Stir in Worcestershire sauce and tomato concentrate. Add carrots, potatoes, bay leaves, rosemary sprig, and frozen peas.
  6. Cover and cook on low for about 7 hours or high for about 4 hours until meat is tender.
  7. If you prefer a thicker stew, mix corn starch with cold water until smooth. Stir into stew about 30 minutes before serving.
