Cowboy Salad is a vibrant, hearty dish that captures the essence of summer with its refreshing mix of grilled chicken, crisp greens, and zesty dressing. Perfect for barbecues or light dinners, this salad offers a satisfying crunch in every bite.

  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 5 cups mixed greens (romaine, spinach, arugula)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tbsp honey
  • 1 tsp Dijon mustard

Instructions

  1. Preheat grill to medium-high heat. Season chicken with salt and pepper. Grill for 6-8 minutes per side until cooked through (165°F). Let rest before slicing.
  2. While chicken cooks, wash and chop mixed greens; halve cherry tomatoes; slice cucumber; and finely slice red onion.
  3. In a jar, combine olive oil, lemon juice, honey, and Dijon mustard. Shake well.
  4. In a large bowl, toss mixed greens with tomatoes, cucumber, onion, and sliced chicken.
  5. Drizzle dressing over salad and toss gently to combine.
  6. Serve immediately or store in the fridge for up to three days.
