  • 1/2 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, mix vegetable oil (and applesauce if desired), sugar, and vanilla until well combined.
  3. In another bowl, combine flour, cocoa powder, baking soda, and salt; gradually add dry ingredients to wet mixture.
  4. Fold in squeezed-dry shredded zucchini until evenly mixed; spread batter into prepared pan.
  5. Bake for 25-30 minutes or until brownies spring back when touched.
  6. For frosting, melt cocoa and butter; mix with powdered sugar, milk, and remaining vanilla until smooth.
