  • 1 tbsp olive oil
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper
  • 16 tbsp marinara sauce
  • 1/3 cup mini pepperoni slices
  • 1 1/3 cup mozzarella cheese
  • Fresh parsley (for garnish)

Instructions

  1. Preheat the oven to 400°F (204°C) and line a baking sheet with parchment paper.
  2. Slice zucchini in half lengthwise and scoop out some flesh to create wells.
  3. Season with olive oil, salt, and pepper; place on the baking sheet cut side up.
  4. Roast zucchini for 15-20 minutes until tender.
  5. Pat dry any moisture from the wells.
  6. Fill each boat with marinara, top with cheese and pepperoni.
  7. Bake an additional 5 minutes, then broil for 3-5 minutes until cheese is bubbly.
