  • 3 medium zucchini
  • 6 oz whole milk ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1 cup shredded mozzarella cheese
  • 10 oz tomato sauce

Instructions

  1. Preheat the oven to 400°F (204°C). Line a baking sheet with parchment paper.
  2. Slice zucchini lengthwise into thin sheets using a mandoline. Roast on the baking sheet after brushing with olive oil and seasoning.
  3. Prepare the filling by mixing ricotta, Parmesan, egg, and Italian seasoning in a bowl.
  4. Spread some tomato sauce on the casserole dish's bottom. Roll each zucchini slice with the ricotta mixture and place in the dish.
  5. Top with remaining sauce and mozzarella. Bake for about 10 minutes until bubbly.
