  • 1 cup whole milk ricotta cheese
  • 1/4 cup grated parmesan cheese
  • 1 cup baby spinach leaves
  • 3 large zucchini
  • 1 cup grated whole milk mozzarella
  • 1 (28-ounce) can organic crushed tomatoes
  • Garlic
  • Olive oil
  • Salt
  • Black pepper
  • Red pepper flakes
  • Italian seasoning

Instructions

  1. Prepare the tomato sauce by sautéing garlic, red pepper flakes, and Italian seasoning in olive oil until fragrant. Add crushed tomatoes and simmer for 15 minutes.
  2. In a non-stick skillet, cook crumbled Italian sausage until nearly cooked through; add sliced mushrooms and garlic until tender.
  3. Combine cooled sausage mixture with ricotta, parmesan, spinach, Italian seasoning, salt, and pepper.
  4. Preheat oven to 425°F (220°C). Spread sauce in a baking dish.
  5. Salt zucchini strips; let sit to draw out moisture. Fill each strip with the sausage mixture and roll tightly.
  6. Place zucchini rolls seam-side down in the baking dish; cover with mozzarella.
  7. Bake uncovered for approximately 25 minutes until cheese is melted and golden.
