  • 1/2 cup Cherry tomatoes (halved)
  • 1/3 cup Shaved parmesan cheese (omit for dairy-free)
  • 1/3 cup Pine nuts (or sunflower seeds for nut-free)
  • 1/4 cup Extra virgin olive oil
  • 3 tbsp Lemon juice
  • 1 tbsp Fresh parsley (chopped)
  • 1 tbsp Fresh chives (chopped)
  • 1/2 tsp Garlic powder
  • 1/4 tsp Sea salt
  • 1/4 tsp Black pepper
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Use a mandoline or vegetable peeler to slice the zucchini into thin ribbons.
  2. In a small bowl, whisk together olive oil, lemon juice, chopped parsley and chives, garlic powder, sea salt, and black pepper to make the dressing.
  3. Combine the zucchini ribbons and halved tomatoes in a mixing bowl; pour the dressing over them and toss gently. Let marinate for about 5 minutes.
  4. Toast the pine nuts in a skillet over medium heat until lightly browned (about 3–5 minutes).
  5. Serve the salad topped with shaved parmesan (if using), toasted pine nuts, and additional herbs.
