  • 1 cup blue raspberry vegan gelatin (prepared)
  • 1/2 cup cold water
  • as needed dollops whipped cream

  2. Mix the Cream Cheese Mixture: Beat softened cream cheese until smooth using an electric mixer. Gradually add whipped cream and vanilla extract; mix until fluffy.
  3. Assemble Layers: Spread half of the cream cheese mixture on the crust, followed by half of the strawberry mixture and half of the prepared blue raspberry gelatin.
  4. Repeat Layers: Add remaining cream cheese mixture, strawberry mixture, and finish with blue raspberry gelatin.
  5. Chill and Serve: Refrigerate for at least 3 hours until set. Top with dollops of whipped cream before serving.
