- 2.5 oz achiote paste
- 1/2 cup fresh squeezed orange juice (from about 2 oranges)
- 3 tablespoons fresh squeezed lime juice (from about 2 limes)
- 3 tablespoons canola oil
- 2 pounds boneless skinless chicken breasts
- 2 medium red onions (sliced)
- 1 cup apple cider vinegar
- Fresh herbs for garnish (optional)
- In a mixing bowl, whisk together the achiote paste, orange juice, lime juice, canola oil, salt, and garlic powder until well blended.
- Marinate the chicken in a resealable bag or shallow dish with the marinade for at least 30 minutes in the refrigerator.
- Preheat your grill to medium-high heat or heat oil in a skillet over medium heat.
- Remove the chicken from the marinade and cook for about 6-7 minutes on each side until the internal temperature reaches 165°F.
- Add sliced onions and whole garlic cloves towards the end of cooking; sauté until softened.
- Optional: Simmer water, apple cider vinegar, sugar, salt, and peppercorns in a separate pot for added flavor.
