  • 2 tablespoons jalapeno juice
  • 1/2 cup almond flour
  • 1 teaspoon Cajun seasoning
  • 3 eggs
  • 2 cups ground beef rinds
  • 1/2 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper

Instructions

  1. Drain jalapenos and pat dry between paper towels.
  2. Prepare three bowls: Mix almond flour, Cajun seasoning, and salt; whisk eggs with jalapeno juice; combine ground beef rinds with garlic powder and cayenne pepper.
  3. Dip jalapenos first in almond flour mixture, then in egg wash, and finally coat with beef rind mix.
  4. Air fry at 400°F for 6 minutes. Flip and cook for another 6 minutes until crispy.
