  • 2 cups raspberry preserves
  • 1/4 cup fruit juice (or broth)
  • 1/2 cup flour
  • 1/4 cup sugar
  • 7 ounces almond paste
  • 4 tablespoons unsalted butter
  • 2/3 cup sliced almonds
  • 1 cup powdered sugar
  • 3 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F.
  2. For the crust, blend 2 cups of flour, 1/2 cup powdered sugar, and 1 cup chilled unsalted butter in a food processor until crumbly. Press into a greased 13 x 9 inch glass pan and bake for 20 minutes until lightly golden.
  3. Mix 2 cups raspberry preserves with 1/4 cup fruit juice in a bowl and spread over the baked crust.
  4. In a clean food processor, combine 1/2 cup flour, 1/4 cup sugar, 7 ounces almond paste, and 4 tablespoons unsalted butter for the topping; pulse until crumbly. Sprinkle over the filling and top with 2/3 cup sliced almonds.
  5. Bake again for 40 minutes or until golden brown; cool completely before icing.
  6. Mix 1 cup powdered sugar, 3 tablespoons milk, and 1 teaspoon vanilla extract for the icing and drizzle over cooled bars before cutting into squares.
