  • ½ cup (125ml) canola oil
  • 1½ cups (300g) sugar
  • ½ cup sour cream
  • 4 large eggs (at room temperature)
  • 2½ cups all-purpose flour
  • 1¼ teaspoon (5g) baking powder
  • ½ teaspoon (3g) salt
  • ½ cup (122g) milk
  • 2 teaspoons (8ml) vanilla extract
  • 1½ cups (340g) butter (for frosting)
  • 56 cups powdered sugar
  • 2 teaspoons vanilla extract (for frosting)
  • 23 tablespoons milk (for frosting)
  • 23 cups strawberries (for topping)
  • 1 cup blueberries (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking pan.
  2. In a large mixing bowl, beat softened butter and canola oil until creamy. Gradually add sugar until light and fluffy. Mix in sour cream followed by eggs one at a time.
  3. In another bowl, whisk together flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture while alternating with milk. Stir in vanilla extract until just combined.
  5. Pour the batter into the prepared baking pan and smooth the top. Bake for about 20 minutes or until a toothpick comes out clean.
  6. While cooling, prepare the frosting by beating softened butter with powdered sugar, then adding vanilla extract and enough milk for desired consistency.
  7. Once cooled, frost the cake generously and decorate with strawberries as stripes and blueberries for stars.
