  • 1 cup pearl couscous
  • 1/2 cup cherry tomatoes, halved
  • 15 oz can corn, drained and rinsed
  • 1 avocado, diced
  • 1/4 cup white balsamic vinaigrette
  • 1 tbsp olive oil
  • Fresh basil for garnish
  • Salt and pepper to taste

Instructions

  1. Cook the couscous according to package instructions; drain and cool.
  2. Heat olive oil in a frying pan over medium-high heat. Add drained corn, season with salt and pepper, and sauté until lightly browned.
  3. Allow cooked couscous and corn to cool completely.
  4. In a large mixing bowl, combine cooled couscous, roasted corn, halved tomatoes, diced avocado, and white balsamic vinaigrette. Gently mix until well combined.
  5. Chill in the refrigerator for at least 30 minutes before serving to enhance flavor.
