  • 2/3 cup granulated sugar
  • 1/2 tsp salt
  • 1 1/4 cups cold unsalted butter, diced
  • 5 cups peeled, pitted, and chopped peaches
  • 1 cup granulated sugar (for filling)
  • 1/4 cup all-purpose flour (for filling)
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 6 tbsp heavy cream
  • 1/2 tsp vanilla extract (optional)
  • 1/4 cup packed brown sugar (preferably dark)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine 2 1/2 cups all-purpose flour, 2/3 cup granulated sugar, and 1/2 tsp salt. Add in 1 1/4 cups cold unsalted butter, diced. Use a pastry cutter or fork to mix until crumbly. Reserve half of this mixture for the topping and press the remaining mixture into the bottom of a greased baking dish.
  3. In another bowl, mix together 5 cups chopped peaches, 1 cup granulated sugar, 1/4 cup all-purpose flour, 1/2 tsp ground cinnamon, and 1/4 tsp salt. Spread this peach mixture evenly over the crust in your baking dish.
  4. Drizzle 6 tbsp heavy cream and optional 1/2 tsp vanilla extract over the peach filling. Sprinkle reserved crumb mixture over the top of the peach layer. Finish by adding 1/4 cup packed brown sugar.
  5. Bake in preheated oven for about 60 minutes or until golden brown on top. Allow cooling before slicing into bars.
