  • 2 cups dried orzo pasta
  • 1 large cucumber, diced
  • 2 cups cherry tomatoes, halved
  • 1 small red onion, diced
  • 12-ounce jar artichoke hearts, drained and chopped (optional)
  • 1/2 cup pitted large black olives, halved
  • 1/2 cup crumbled feta cheese
  • 1/3 cup fresh parsley, chopped
  • 1/3 cup fresh mint, chopped
  • 1/4 cup Greek salad dressing or red apple vinegar vinaigrette
  • 2 tablespoons fresh lemon juice

Instructions

  1. Cook the orzo in a large pot of salted boiling water according to package instructions until al dente. Drain and cool.
  2. While the pasta cooks, prepare the vegetables by dicing the cucumber and red onion and halving the cherry tomatoes.
  3. Combine cooled orzo and vegetables in a mixing bowl. Add olives and feta cheese.
  4. In a small bowl, whisk together the dressing ingredients and pour over the salad mixture.
  5. Toss gently to combine all ingredients thoroughly.
  6. Chill in the refrigerator for at least 30 minutes before serving.
