  • 1 small bulb fennel
  • 1 green apple
  • ¼ cup parsley
  • ½ cup walnuts
  • 3 tablespoons parmesan cheese
  • ¼ cup extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 tablespoon honey
  • pinch kosher salt
  • few turns cracked black pepper

Instructions

  1. Wash all vegetables thoroughly under cold water.
  2. Remove the ends from the celery stalks and slice them diagonally into thin pieces.
  3. Trim the fennel bulb by removing stalks and fronds; then slice thinly using a mandoline for uniformity.
  4. Core the green apple and cut into thin slices.
  5. Preheat a skillet over medium heat.
  6. Add walnuts to the skillet and toast them lightly for about 5 minutes or until fragrant. Stir frequently to prevent burning.
  7. In a mixing bowl, combine extra virgin olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper.
  8. Whisk until well blended.
  9. In a large mixing bowl, combine sliced celery, fennel, green apple slices, chopped parsley, toasted walnuts, and parmesan cheese.
