  • 12 button mushrooms (cleaned and stems removed)
  • 1/4 pound chicken sausage (bulk)
  • 1/2 small sweet onion (diced)
  • 1 jalapeno pepper (diced)
  • 1/4 teaspoon New Mexico chile powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon Kosher salt
  • Olive oil (for drizzling)
  • 2 tablespoons cornmeal
  • 1/2 cup Pepper Jack cheese (shredded)

Instructions

  1. Clean the mushrooms with a damp paper towel and remove the stems.
  2. In a fry pan over medium heat, cook the chicken sausage until nearly done. Add diced onion and jalapeno; sauté for about 3 minutes until tender.
  3. Stir in chile powder, cumin, and salt. Allow mixture to cool slightly before stuffing into mushroom caps.
  4. Arrange mushroom caps on a sheet pan, drizzle with olive oil.
  5. Fill each cap with the chicken sausage mixture, top with cornmeal and cheese.
  6. Preheat oven to 400°F (200°C) and bake for 15-20 minutes until cheese is golden and mushrooms are tender.
