  • 2 cups cooked shredded chicken
  • 1 cup shredded sharp cheddar cheese
  • 12 diced jalapeños
  • 2 tbsp ranch seasoning
  • 1/4 cup cream cheese
  • 1/2 cup mayo (for dip)
  • 1/4 cup sour cream (for dip)
  • Neutral oil for frying
  • 1 cup flour
  • 2 eggs, beaten
  • 1.5 cups breadcrumbs or panko
  • 1/4 cup grated Parmesan (optional)
  • 1/2 tsp garlic powder
  • 1 tsp lemon juice or white vinegar
  • 1 tbsp chopped parsley
  • Red pepper flakes, to taste
  • Salt & pepper to taste

Instructions

  1. In a mixing bowl, combine shredded chicken, cheddar cheese, diced jalapeños, ranch seasoning, cream cheese, garlic powder, salt, and pepper.
  2. Form the mixture into bite-sized balls and chill for 15-20 minutes.
  3. Set up a breading station with flour in one bowl, beaten eggs in another, and breadcrumbs in a third.
  4. Coat each ball in flour, dip in eggs, then coat with breadcrumbs.
  5. Heat oil to 350°F (175°C) and fry the poppers until golden brown (about 3-4 minutes per side).
  6. Drain on paper towels or a wire rack.
  7. For the dip, mix mayo, sour cream, ranch dressing or seasoning, garlic powder, lemon juice (or vinegar), parsley, red pepper flakes, salt & pepper until smooth.
