  • 1 pound ground beef
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 packet taco seasoning
  • 2¼ cups beef broth
  • 1 can (10 oz) Rotel tomatoes
  • 2 tablespoons tomato paste
  • 1½ cups long-grain white rice (dry)
  • 2 cups shredded cheese

Instructions

  1. In a large skillet over medium-high heat, heat olive oil. Add ground beef and onion; cook until browned and onions are translucent (8-10 minutes). Drain excess grease.
  2. Stir in minced garlic and taco seasoning; cook for another 30 seconds until fragrant.
  3. Mix in beef broth, Rotel tomatoes, and tomato paste; bring to a boil.
  4. Add rice; return to a boil then cover and reduce heat to simmer for about 15 minutes until rice absorbs most liquid.
  5. Sprinkle cheese on top; cook uncovered for an additional 5 minutes until melted.
  6. Serve hot with desired toppings.
