  • 2 cups cooked, shredded chicken
  • 1 avocado, diced
  • 1 cup grated cheese (mozzarella recommended)
  • 4 large tortillas
  • 4 Tablespoons sour cream
  • 1 Tablespoon mustard
  • 1 Tablespoon olive oil
  • Salt and pepper – to taste
  • 2 Tablespoons cilantro – chopped
  • 1 Tablespoon oil

Instructions

  1. Heat olive oil in a frying pan over medium heat. Season chicken with salt and pepper, then cook until done. Spread mustard on the chicken and add water; cover to steam for a few more minutes.
  2. Cut cooked chicken into strips and combine in a bowl with cheese, cilantro, and diced avocado.
  3. On each tortilla, spread sour cream and add one-quarter of the filling mixture before rolling tightly.
  4. In the same frying pan, heat oil over medium-high heat and crisp each burrito seam-side down until golden brown on both sides.
