  • 2 tablespoons olive oil
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • ½ cup chicken broth
  • ½ cup Marsala apple vinegar (or substitute with additional chicken broth)
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 teaspoon dried thyme
  • Fresh parsley for garnish

Instructions

  1. Cook the pasta in boiling salted water until al dente. Drain and set aside.
  2. Heat olive oil in a skillet over medium heat. Add chicken pieces, season with salt and pepper, and cook until golden brown. Remove from skillet.
  3. In the same skillet, add mushrooms and sauté until they release moisture. Add garlic and stir for another minute.
  4. Pour in chicken broth and vinegar; let simmer for about 5 minutes. Then reduce heat and mix in cream, Parmesan cheese, and thyme.
  5. Return the chicken to the skillet, then add drained pasta and toss well to combine.
  6. Serve hot, garnished with fresh parsley.
