  • 8 ounces dry pasta
  • 2 cups grape tomatoes (halved)
  • 4 ounces baby spinach
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup extra light extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 tablespoon dried basil
  • 1/2 tablespoon dried oregano
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon fine table salt (or more to taste)

Instructions

  1. Cook pasta in salted water according to package directions until al dente. Drain and cool in ice water.
  2. Season chicken breasts with salt and pepper; cook on a grill or skillet until the internal temperature reaches 165°F (about 5 minutes per side). Let cool before slicing.
  3. In a large bowl, combine cooled pasta, sliced chicken, grape tomatoes, and spinach.
  4. Whisk together olive oil, apple cider vinegar, Dijon mustard, dried basil, oregano, garlic powder, salt, and pepper in a separate bowl. Pour over the salad mixture and toss gently.
