  • 2 Tbsp cilantro, finely chopped
  • 12 avocados, diced
  • 0.5 cup plain Greek yogurt
  • 0.25 cup fresh lime juice
  • 2 cloves garlic, minced
  • 0.5 tsp salt
  • 0.125 tsp cayenne (Adjust to taste)

Instructions

  1. Cook pasta according to package instructions until al dente; drain and rinse under cold water.
  2. Chop red onion and halve cherry tomatoes while pasta cooks.
  3. For the dressing, mix Greek yogurt, lime juice, cilantro, garlic, salt, and cayenne in a bowl.
  4. In a large bowl, combine cooled pasta with corn kernels, cherry tomatoes, red onion, diced avocado, and finely chopped cilantro.
  5. Pour dressing over salad and toss gently until well combined.
