  • 1/2 large Onion (diced)
  • 1 Jalapeno (finely diced)
  • 3 Garlic Cloves (minced)
  • 14 oz. Canned Coconut Milk
  • 2 Tablespoons Fresh Lime Juice
  • 1 Tablespoon Soy Sauce
  • Cilantro (for garnish)

Instructions

  1. Season chicken with salt and pepper. Heat oil in a skillet over medium-high heat and cook chicken until browned, about 2-3 minutes per side. Remove and set aside.
  2. In the same skillet, sauté onion and jalapeno until softened, then add garlic and ginger.
  3. Stir in coconut milk, soy sauce, lime juice, and simmer until thickened, about 4 minutes.
  4. Return chicken to skillet, simmer until fully cooked (165°F internal temperature).
  5. Garnish with cilantro and serve.
