  • 4 egg whites
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 14 ounces sweetened flaked coconut
  • 1/2 cup white chocolate chips (melted)
  • 7090 mini candy eggs

Instructions

  1. Preheat your oven to 300°F and coat a mini muffin pan with cooking spray.
  2. In a mixing bowl, whisk together the egg whites, sugar, and salt until combined. Stir in the sweetened flaked coconut until fully mixed.
  3. Spoon 2 tablespoons of the mixture into each muffin cup, pressing it into shape.
  4. Bake for 28-30 minutes until golden brown on top. If needed, cover with foil if browning too quickly.
  5. Allow cooling in the pan for about 10 minutes before transferring to a wire rack to cool completely.
  6. Using a piping bag filled with melted white chocolate, add a small amount to each nest and top with mini candy eggs.
