  • 45 tablespoons lemon juice
  • 1 pound uncooked pasta (penne or rotini)
  • 1 pound asparagus
  • 1 cup cherry tomatoes
  • 1/2 large red onion
  • 1 1/2 teaspoons minced garlic
  • 4 tablespoons olive oil
  • 1 tablespoon honey
  • 1/2 teaspoon lemon pepper
  • Zest from 1 lemon
  • 1/2 teaspoon sea salt

Instructions

  1. Prepare the dressing by combining Greek yogurt, lemon juice, minced garlic, olive oil, honey, lemon pepper, zest, and salt in a jar. Shake until well mixed.
  2. Boil salted water in a large pot. Cook pasta for 11 minutes; then add asparagus and cook for an additional 2 minutes. Drain and rinse under cold water.
  3. In a large bowl, combine the cooked pasta and asparagus with halved cherry tomatoes and sliced red onion. Toss with the dressing until evenly coated.
