  • 1 lb boneless, skinless chicken breasts, cut into thick strips
  • 8 oz penne pasta
  • 1 cup heavy cream
  • 1 cup Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • 1 cup freshly grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 tbsp garlic, minced
  • 1 tsp Cajun seasoning, adjust to taste
  • 1 tsp paprika
  • Salt and pepper, to taste

Instructions

  1. Bring a large pot of salted water to a boil. Cook the penne until al dente according to package directions. Drain and set aside, reserving cup of the pasta water.
  2. While the pasta cooks, season the chicken strips with Cajun seasoning, paprika, salt, and pepper.
  3. In a large skillet over medium-high heat, heat olive oil. Add chicken strips and cook for about 4–5 minutes per side or until golden-brown with crispy edges. Remove chicken from skillet and set aside.
  4. In the same skillet, lower heat to medium. Add butter and minced garlic. Stir until garlic is fragrant, about 30 seconds.
  5. Pour in heavy cream and stir until warm. Add Velveeta cubes; stir until melted and smooth.
  6. Stir in mozzarella and Parmesan cheeses until sauce becomes thick and creamy. If too thick, add a splash of reserved pasta water.
  7. Add cooked penne into the skillet, stirring until fully coated in sauce. Simmer for an additional 1–2 minutes to blend flavors.
  8. Return cooked chicken to pan or serve separately beside pasta. Spoon over any remaining garlic butter from chicken pan for extra flavor.
  9. Garnish with fresh parsley if desired. Enjoy this creamy delight alongside juicy chicken!
