  • 2 cups cooked shredded chicken
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 8 flour tortillas
  • 2 cups shredded Monterey Jack cheese
  • 1 can (10 oz) red enchilada sauce

Instructions

  1. Prepare the chicken by boiling or baking until fully cooked; then shred it.
  2. In a skillet over medium heat, sauté chopped onion and minced garlic in vegetable oil for about 3-4 minutes.
  3. Add the shredded chicken to the skillet along with cumin, chili powder, salt, and pepper; stir well and cook for another 3-5 minutes until heated through.
  4. Spread a small amount of enchilada sauce in the bottom of a baking dish.
  5. Fill each tortilla with the chicken mixture and shredded cheese; roll tightly and place seam side down in the dish.
  6. Pour remaining enchilada sauce over the rolled tortillas and top with more cheese.
  7. Cover with foil and bake at 375°F (190°C) for 20-25 minutes; remove foil and bake for an additional 5-10 minutes until cheese is bubbly.
