  • 8 oz Penne or Fusilli
  • 4 cups Vegetable or Chicken Broth
  • 2 tbsp Olive Oil
  • 1 cup Cherry Tomatoes (halved)
  • 1/2 cup Kalamata Olives (sliced)
  • 3 cloves Garlic (minced)
  • 1 medium Red Onion (chopped)
  • 1 cup Fresh Basil (torn)
  • 1 tbsp Oregano
  • 1/2 tsp Crushed Red Pepper Flakes (optional)
  • Salt to taste
  • Black Pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped red onion until translucent (about 3 minutes). Add minced garlic and cook for another 30 seconds.
  2. Stir in penne or fusilli and pour in vegetable or chicken broth. Bring to a boil, then reduce heat and simmer uncovered for about 10 minutes until pasta is al dente.
  3. Mix in cherry tomatoes, olives, basil, oregano, salt, black pepper, and optional crushed red pepper flakes. Stir gently until well combined.
  4. Remove from heat and let sit for a couple of minutes before serving. Garnish with extra basil if desired.
