  • 1 pound boneless, skinless chicken thighs
  • 2 tablespoons fresh lime juice
  • 2 tablespoons avocado oil
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 cup sweet corn kernels
  • 1/2 small red onion
  • 1/2 cup Greek yogurt
  • 1/4 cup mayonnaise (optional)
  • 1/2 cup feta cheese
  • 1/4 cup fresh cilantro
  • 2 cups cooked jasmine rice

Instructions

  1. In a bowl, mix lime juice, avocado oil, chili powder, ground cumin, garlic powder, salt, and black pepper. Add chicken thighs and coat well. Let marinate for at least 20 minutes.
  2. Heat a skillet over medium-high heat and cook marinated chicken for 5-7 minutes on each side until cooked through (165°F). Let rest before slicing.
  3. Char sweet corn in a pan until golden. Chop red onion and cilantro.
  4. Start with jasmine rice as the base, add sliced chicken, charred corn, red onion, dollops of Greek yogurt and mayonnaise if using, feta cheese, and cilantro.
