  • 175 g butter
  • 175 g light brown sugar

  • 175 g plain flour
  • 225 g raisins
  • 225 g currants
  • 225 g cherries
  • 1 tablespoon apricot jam
  • 500 g marzipan
  • 500 g ready-to-roll fondant

Instructions

  1. Preheat your oven to 160°C (320°F) and line a 9×13 inch baking tray with parchment paper.
  2. Soak chopped dried apricots in apple juice for enhanced flavor.
  3. In a mixing bowl, cream together softened butter and light brown sugar until fluffy. Gradually mix in beaten eggs, followed by plain flour until just combined.
  4. Fold in the soaked apricots, raisins, currants, and cherries.
  5. Pour batter into the prepared baking tray and smooth the top. Bake for about 1 hour or until a skewer comes out clean.
  6. Allow cooling completely before brushing with warmed apricot jam, then top with rolled marzipan and fondant.
