  • ¼ cup granulated sugar
  • 6 tablespoons unsalted butter (melted)
  • 16 oz cream cheese (softened)
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup sour cream
  • ¾ cup fresh blueberries
  • 1 ½ cups fresh strawberries (sliced)
  • 2 tablespoons strawberry or raspberry jam (warmed, optional)

Instructions

  1. Preheat the oven to 325°F (163°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press this mixture into the bottom of a greased 9×13 inch baking pan.
  2. In another bowl, beat softened cream cheese until smooth. Gradually add sugar, mixing well. Add eggs one at a time, then stir in vanilla extract and sour cream.
  3. Pour the cheesecake filling over the crust and bake for about 30 minutes until set but slightly jiggly in the center. Let cool at room temperature before chilling for at least two hours.
  4. Once chilled, top with fresh blueberries and sliced strawberries. Optionally glaze with warmed jam before serving.
